The Wine-making : 100%manual harvesting and destemmed before putting into vats. Carbonic wine-making in an immersed cap during long vatting (21days) to extract tannins, colour and fruit.Vinification with immersed cap

Ageing : Wine which aged first in tank and then 6 months in oaks of 3 years to have round and long tanins.

Tasting : Red fruit and spices notes. Stemming from schist and granite soil this wine is just as enjoyable young as after a few years ine the cellar.

Pairing suggestions : Peking duck aiguillettes, chutney with cumin
